Fresh Food Thursday | Fudgy Mocha Brownies
I’ve tried a few homemade brownie recipes, but they never seem to turn out as chocolatey and delicious as the boxed versions.
Until I found this recipe. It’s SUPER EASY with few ingredients, and it’s 100 times better than any boxed version. I’m never going back.
Fudgy Mocha Brownies
Originally from the book, Perfect Chocolate
Makes an 8×8″ pan of brownies. *Photos show a doubled recipe for a 9×13″ pan.
2 oz. butter
4 oz. semisweet chocolate chips (for fudgier brownies, use 6 oz.)
1 T instant coffee powder dissolved in 1 T hot water (or a shot of espresso)
1 cup brown sugar
2/3 cup all-purpose flour
1/2 tsp. baking powder
1/3 cup coarsely chopped pecans or walnuts (optional)
1. Place the chocolate and butter in a heavy-bottom pan over low heat until melted. Mix in coffee/ espresso. Remove from heat and let cool.
2. Place sugar and eggs in large bowl and cream together until light and fluffy. Stir in the chocolate mixture. Add flour and baking powder and lightly fold into the mixture. Add the nuts.
3. Pour batter into greased 8×8″ pan. Bake at 350 degrees for 25–30 minutes or until toothpick inserted in the center comes out clean.
Enjoy with ice cream and hot coffee!
